pumpkin baking and rain is falling

today is a perfect fall day to stay inside
my house currently smells just how it should for the end of october
pumpkin baked goods and fresh rain falling, yes please
and I finally got the chance to make them again yesterday morning
and I've been enjoying them ever since, I've shared a few
but I think baby and I have had the most
the best part in making these muffins is that they only take two ingredients
15 oz. can of pumpkin
yellow cake mix
that's it
however, if you like spicier pumpkin baked goods
which I do
I suggest getting into the spice cabinet and just going for it
I used my pumpkin pie spice, cinnamon, and nutmeg
and I might have even thrown in some allspice after I snapped this picture
and because there is no raw egg in the batter
this pregnant lady had no problems testing the batter until it tasted just how I wanted

make sure to fill the cupcake liners up pretty high because they will not rise a ton
bake for 20 minutes at 350 and call it a day

simple summer sorbet sweet treat

yup, that's what I'm calling this pie
and the good news is
it is much easier to make then to say the whole name I just came up with
right before school started the mr. & I were able to have a little b.b.q
with some great friends
and I snagged this recipe for the amazing dessert we had that night

all you need are 3 ingredients [my kind of recipe]
1. your favorite sorbet flavor - I went with raspberry, the original flavor we tasted
2. cool whip
3. pie crust - I love chocolate & fruit together, so I opted for the Oreo crust, but graham cracker crust would work too
and that's it
putting it together is just as simple
1. soften the frozen goods
2. scoop sorbet into crust and then smooth
3. top with cool whip and return to freezer to firm

easy as pie

this year I wanted to try something new for the 4th of july
and I had pinned this ridiculously easy recipe a while back
so I figured I would give baking cake cookies a shot
 now I just hope that they taste as great as they look

here's how easy they are to make:
1 box of yellow cake mix
2 eggs beaten
5 T melted butter
2 cups M&Ms or mini chocolate chips [I went for a patriotic twist]

mix all ingredients together and bake at 350F for 25 minutes
I put mine in a pie dish so mine took a little longer to bake
the original recipe called for a 9X13 pan
so do as I did and check often!

happy hearts & red pretty things day

here's to a day of all things red, pink, heart-shaped and such
last friday the husband and I enjoyed dinner with friends
where we ate pizza, shared stories, got to hang out with one pretty adorable baby
and topped the evening off by making lots of very awesomely valentines-ie cake pops
and I can take NO photo credit for these greats shots of our final product
so thanks Evie for snapping some real photos of our hard work!

they're like heaven, no, wait, willy wonka

at least that's what I've been told
and they work pretty well in that little starburst pyrex too!
cake pops were a hit this new year's eve
and even though they are a bit of a process
they are kind of fun
let me say that out of a whole boxed cake mix
the ones you see are the only ones finished
there were many "oops" in the process
but we really didn't need 24 cake pops for our little group
and I can't wait to try lots of different colors 
and the best part - sprinkles are a must when decorating these guys
and that is one of my favorite parts!
